Gluten-Free Pancake Recipe for Pancake Day

Pancake Day, or Shrove Tuesday, is a beloved tradition that marks the last day before the start of Lent. It's a time to indulge in delicious treats before the fasting period begins. And what better way to celebrate than with a stack of fluffy, gluten-free pancakes? Whether you're gluten intolerant or simply looking to try something new, this easy recipe is sure to delight your taste buds.

Ingredients:

  • 100g plain gluten-free flour

  • 2 eggs

  • 300ml semi-skimmed milk

  • 1 tbsp sunflower oil or vegetable oil, plus extra for frying

  • Pinch of salt

Method:

  1. Prepare the Batter: In a large mixing bowl, combine 100g of plain gluten-free flour and a pinch of salt. Make a well in the centre and crack in two eggs. Pour in about 50ml of semi-skimmed milk and 1 tbsp of sunflower oil.

  2. Whisk the Batter: Start whisking from the centre, gradually drawing the flour into the eggs, milk, and oil. Once all the flour is incorporated, beat until you have a smooth, thick paste. Add a little more milk if the batter is too stiff to beat.

  3. Adjust the Consistency: Add a good splash of milk and whisk to loosen the thick batter. While still whisking, pour in a steady stream of the remaining milk until you have a batter that is the consistency of slightly thick single cream.

  4. Prepare the Pan: Heat a non-stick frying pan over a moderate heat, then wipe it with oiled kitchen paper.

  5. Cook the Pancakes: Before ladling the batter into the pan, remember to give it a quick whisk each time. This ensures that the gluten-free flour remains well mixed with the milk. Ladle some batter into the pan, tilting it to spread the mixture evenly. Quickly pour any excess batter back into the mixing bowl and return the pan to the heat.

  6. Flip and Cook: Allow the pancake to cook undisturbed for about 30 seconds. Once the underside turns golden, it's ready to flip. Use a palette knife to lift and flip the pancake, ensuring it lies flat against the base of the pan. Cook for another 30 seconds before transferring it to a warm plate.

  7. Repeat and Serve: Continue cooking the remaining batter, stacking the pancakes onto a plate as you go. Serve them hot with your favourite toppings, such as fresh berries, maple syrup, or a dollop of whipped cream.
